How complete is the roller?
Take a look at their website. It has a very good description of what comes with it.

When considering the dropped footbox, how tall is a "tall driver"? I am 6'3 with a size 14 foot.
Enough said, you're a tall driver, get the dropped foot box

What is your recommendation regarding not immediately finishing the filed body? Does the filed body look / weather acceptably?

See attached picture. It should weather the same as brushed. However, it's better to finish the body whether painting or brushing or polishing before the interior is in, but not impossible later, just a bit more work and more care to keep the interior/engine/trunk clean. . .

The FAQ mentions that the engine heat negates the need for a defroster - am I understanding correctly that the windshield will stay clear on a reasonably cool morning or evening drive due to radiant heat from the engine?
After about 20 minutes of driving, from the waist down it's warm enough to open the fresh air vents when it's 45 degrees out. (as long as you're wearing a ski coat, hat and gloves). These cars come with no top, so you don't need a defroster. If you get a top custom made for it, I am not sure if the window would fog up, but I suspect no, since the interior won't really be sealed, you'd still have a lot of air "leaks".
