Ernie, we can a lot of food...including meat based food. Our problem is harvest and man power. Two years ago, I invited a friend over to help can tomatoes. We worked all day to get the quarts we ended up with on the shelf.
I do not know if we are just more picky, or if we are just slow, but for us it takes time.
We do a deer, with grinding, in 6 to 8 hours. Time is the one thing that challenges a household with being more self-sufficient.
