Let's see if anyone else responds, but a good route that is popular is to take Route 12 East from I-5 up into the mountains toward White Pass. There are lots of restaurants along the way, and the scenery is quite beautiful. The road is smooth, and quite interesting as it winds under large pines on the way up to, and beyond the pass.
