A mechanical mount on the roll bar is a great way to go. You might be able to fabricate some outriggers to attach to the roll bar to get some different perspectives ... one view I like is along the front fender where you can see the wheel moving as the car is turned.

It would be neat to pool together (4) GoPro cameras, put them on an appropriate 'chase' car, front & back and both sides, and take a nice drive with lots of (legal of course) passing and lane changes. Even better would be a setup like this on a race track.
