Carb setup properly will get the job done on the track, and make as much power as EFI. To be honest I would put a new LS7 in this car if I was doing it again mainly due the Yates manifold etc making my scoop bigger. The advantage I would have with a 505bhp LS7 would be enough power, drivability and almost 30mpg fuel economy instead of probably 5 - 12mpg with the carbed Nascar engine.
If you were looking at it from a replica point of view (not a lookalike) then you wouldn't use EFI.
Ford engine is still better than GM in my lookalike AC Cobra!
