Default Dipstick question

I have just done the first oil change after my engine was reconditioned on a Cobra build I took over from someone else. The engine is from a 1989 Mustang and is a 5.0 HO V8 i.e. a 302.
When I emptied out the oil I got about 4 quarts out which I thought was odd as the capacity is 8 and I expected to get about 6 qts out. BTW I didn't measure what I took out before I put the new oil in, first mistake I guess.
I put 6 qts in before I checked the dipstick and now I find the level indicates at the F of the word Full on the dipstick, see attached photos of dipstick. Which is way above where it should be.
The oil pan has 2 drain plugs so I have emptied some oil out of the front plug the highest of the 2 plugs until nothing else comes out.
My questions are:
The dipstick and sump are not matched therefore they could be giving me a false indication.
How high in the sump should the oil sit? At the moment it can't be any higher than the ledge which splits the front sump plug area and the rear one. Is this enough oil?
Should I put 6 qts in and re-mark the dip stick?
