I bought some fairly nice indoor/outdoor carpeting from Lowes. I didn't spend a lot of money on fancy automotive carpeting, because I knew it would be exposed to the elements.

I considered spray on coating, like pick up bed coating. I have it in the trunk, and that's fine. But I think it would look tacky on the interior.

I have seen a CF dash panel here and there. But I think they were all custom made for that particular car.

As for gauges, that's almost as subjective as the color. I prefer Autometer. But Speedhut is making some pretty nice stuff, too. If you have the bux, you can get them custom made.
