Polished looks great until you get them wet while hot. Then you end up with some nasty discoloration that wont go away. In addition, the polished finish needs to be polished regularly in order to keep them from having a bronze look.

Ron uses an aircraft grade ceramic coating that can be polished to a deep luster with a bit of effort and lasts for quite a while. I purchased my ceramic coated pipes from him in January of 2012, polished them up soon after and have not re-visited them so far this year. I imagine I will re-polish them this winter.
