I am using the 1979-1995 Clutch cable.
The Mustang Forums all recommend getting OEM Ford cable as most of the aftermarket ones introduce allot of cable resistance. Get the one that is adjustable at the clutch fork for added adjustment.

from firewall to end of the firewall adjustor is going to be about <I'll update it when I get home and measure it> inches.
Let me recommend the McLoed 1735 Firewall Adjuster. It's a little more (~$20) but has a bearing where the clutch cable seats to make things turn easier. I guess the others do not.

Note, that the 79-95 clutch cable does not fit directly to the clutch pedal. You will have to mock something up to house the end of the clutch cable. I can post a pic later of what I did if you are interested.
