You're overworrying this Phil. !80 Stat is fine. You could see running temps up to about 235 (I did) with the extended boil point that an 18 pound cap and AF mix allow-without boil over. Only worry if prolonged is that the brass tank splits its seams or a worn hose lets go. You are checking your hoses aren't you???.
The only concerns are that oil temps mimic that (they should) and keep it moving. If you must idle (lights etc), raise the RPM to 1800 or so to move the water pump faster.
Drive more / worry less.
-and stop listening to the Orifice-errr-Oracle of Overflow. He likes to fabricate tall tales to impress newer guys that he knows what he's talking about. -NOBODY would tell you your head gaskets are gone with a puddle at the overflow tube....
