I am not suggesting that you have an issue at all, but; on my 428 FE the engine ran up to 195 to 205 degrees F in the summer months, and would almost over-heat at traffic lights on a hot day.
The timing was too far advanced.
I adjusted it with the timing light at 30 degrees and ran the engine up until I achieved full advance, then adjusted to zero on the timing mark on the balancer.
On a hot day now; the temp is 170 F to 180 F.
The car has a 180 degree thermostat.

I had already installed an advance kit for my MSD distributor and 6A ignition box.
