Congrats on your purchase. I saw that listing and thought it was good value and I few simple things will really personalise it for you.
As for offsets, there are probably easier ways, however I would measure your shock mounting distance at the ride height, then jack up and place on stands, remove wheels and shocks, use some box tubing with holes drilled for the same distance as the shocks mounts at preferred ride height.
Now you have your suspension in the right spot. You can now start taking measurement from wheel face and so on, check clearances to inner guard , chassis and whatever else may be in the way.
I am sure someone will come on with a better option, but this is just my way and it's worked in the past.
