Wood steering wheels are usually mahogany, aren't they? Seems like a good stable wood for the purpose. The wood dash above looks very similar to mahog, also. You should be able to find veneers in just about any wood type, though. Made properly, just about any hardwood would work for a steering wheel, I would think. The biggest issue with woods like maple is that they like to move with temp & climate change. Laminating wood properly should help stabilize a lot of that, though. I think flamed maple is pretty tough to beat, for tastefully good looks
