You may have air in your cooling system that is trapped. You can try running the car up on ramps or jacking the front up to elevate it, start it up and move the air towards the thermostat and radiator.

Did you drill a small relief hole in the thermostat flange to allow air to bleed past it?

It takes a long time and some road travel to warm the oil up.
