Welcome to AZ Dino. It has been a while since I registered my Cobra but I did it at the Scottsdale DMV. It was quick and painless, or at least as painless as it gets at the DMV.

You might give them a call and ask just what you need to register the car, might be able to make a reservation to get the car inspected but not sure, mine is registered as a 1964 Cobra Roadster, they will assign a AZ registration number. As Bob said in Arizona cars are registered as what they represent so it shouldn't be to hard. At least Scottsdale DMV is close to where you live in Cave Creek.
