The jumping around is tramlining. It occurs more frequently with wider tires and more aggressive alignments. You could put more caster in the alignment to reduce.
NT01s are what I run, but they are no good wet. I have no intention of driving in the rain. FFR recommends Toyo Proxies R888. They have a good rain rating, but I have never tried them. They are available in the sizes you are looking for. Toyo and Nitto are sister companies, from what I've been told.

PS: Try 22 psi to start with that size tire on the Cobra.
