I have BD 329 with a Ford 392 crate motor and car was built by Cashburn that was purchased from original owner in 2017. It does have a Holley 770 Avenger. I had the same exact problem with break up at a lower RPM (maybe 2500). The car had 2700 miles at that time. Stupid question- does the car wreak of fuel in your garage but you see no visible fuel leaks from tank to the carb? My fix was having DeVinci Carbs in Houston rebuild the carb and so some minor modifications like shaving the choke horn off and little bit of metering plate work. He did find some crab in the carb. The rebuild fixed the stumble and reduced the smell of fuel in the garage by 80%. Been good to go ever since and that was 5000 miles OK.
