I thought of this picture you posted from a while back when I was watching the video. Probably why I take my bowls off every winter and clean them.

You mean like this? My first primary metering block on my Holley carb was really susceptible to ethanol. Fortunately I cracked that one and replaced it with one that isn't nearly so bad. Somewhere I read that in the early 2000's Holley had a run of particularly bad metal.
