There are numerous options for both front and rear. For example, Wilwood has a few configurations for the rear axle, with the parking brake either a separate caliper on the rotor or an internal drum brake. There are others, of course, with similar configurations. There are also a number of suppliers of kits for Ford rear axles that use GM calipers that have an integral parking brake mechanism that actuates the brake piston (which is what I'm running). Front brake kits for Mustang II front suspension go anywhere from single piston calipers to those that use 2, 4, or 6 pistons.
One factor to consider is your wheel size - 13" rotors don't fit in 15" wheels. If you're running 15" wheels you have fewer choices than if you're running 17" or 18" wheels.
What about your intended usage? Street, autocross, track?
