Here's the only thing I can think of. Secure the nut so it won't spin and use a grinder to remove the rounded top down to the bolt. At that point, grind/cut a narrow slot in the end of the bolt so you can use a screw driver to hold it while you turn the nut. The heat of grinding plus a little lubricant may make it easier to remove the nut.
