Rob,
For your motor, I'd go with at least 220 . That'll keep you from getting yourself in trouble.

Tony put a 160 in mine because of....well....they way I drive the car. I imagine with your motor, you'll want the 160. Your temps will climb above that with a good long run. I did a parade this morning, and I hit almost 180. I'll bet when I push it hard, with my new 351 in it, I'll go over 180. No problems burning junk off.
