Default Ford Racing Valve cover question

Ok, I've got the "Cobra" valve covers for a carbed 302, with the breather on one side and the pcv on the other...my question is, there is a plate that is bolted onto the inside on the valve cover under each opening (breather and pcv) so my question is, do i leave those plates on? or should i take them off to allow air to flow through better...and also, does it matter which side of the engine the valve covers go on?...i'm thinking the pcv goes on the passenger side but i don't know for sure.
