Ok, here goes. On my 1969 428SJC that is bored .065 and has the stock 427 heads that came on it, I am using a Holly 850 double pumper with large jets. It has a dealer installed high rise aluminum Edelbrock intake and they set it up on the dyno and this was the best combination for mine.

The Holly number for a 750 double pumper is 4779 and will be found on the front side of the choke tower. An 800 double pumper is 4780 and an 850 is 4781. The double pumpers should also have a manual choke which you can remove and replace with an electric one if you want. From what you said about your engine I think the 750 would be a good choice as your's doesn't sound as if you are going for a radical engine. What cam are you going to use?
If you find a used one, check to be sure the linkeage works smoothly and that the butterflys open all the way. Also find a flat spot and check for any warpage of the mounting plate.
