If you were going to be doing a lot of serious racing, then the larger wheels would make it easier for you to find good racing tires. As for trying to find the correct apex, did any of them teach you about the corner limit point? That is where you drive at a speed that if a car is stopped in the middle of the track just beyond where you can see around the corner, you can stop before you hit him when he comes into view. This is a little slower than just hauling around the corners, but you will gain speed as you do it because you will learn to adjust your entry angles and then as you get more familiar with the track your apex location will be there without you having to think abut it. This is one of those slower is faster things. Like everything, it takes practice and getting familiar with the track conditions, which will change from day to day.
