Default Fan thermostatic sensor location

originally my 427 S/O had the sensor for the fan control installed in a "'splice" tube that was installed in the middle of the lower radiator hose. Looks like the sensor is a 7/8 diameter thread with 2 male electrical connectors sticking out the top.

I want to replace the lower rubber hose with a braided line and am trying to figure out where I can install this sensor, or ideas on replacing the sensor and using something into the intake or one of the probe sensors that slide into the radiator core.

I have a 1966 aluminum police interceptor intake and trying to decide where I would access the water jacket on that and what size and type of sensor I'd need.

Appreciate any ideas.
