Default 427 side oiler marine block

Are there any pitfalls to drilling a marine side oiler block (now a center oiler) to be a side oiler? Dove engineering will be doing the machining. Another question regarding the engine is the carburetor size. The bore will be .010 over and the C/R will be about 10.5:1 using a Crain 530 lift cam and solid lifters. Will a Holley 750 be adequate or should I use a Holley 850?
