I've actually used stainless in the engine bay. I wanted something a little more hard wearing in the engine bay and I got the sheet of stainless at a price a couldn't refuse
Like you mentioned, I also made extensive use of cardboard to make up templates and then took these down to my local sheetmetal place for cutting/welding etc.
