I had a similar problem determining the correct "full" mark on my dip stick. When I got the car, it had a Mr. Gasket stick in it.
After the first
oil change, ( I have an 8 quart pan ) the
oil level on the stick was about one half inches below the full mark.
So what to believe..... the stick...... the pan....... what to do
So I went out and bought a NOS dip stick and matching tube. Cost me only 15 bucks. I now feel confident of where the correct full mark is........ which in my case was right on the mark after adding 8 quarts in the pan. With the old stick, I guess that there was about a quart to maybe two quarts too much
oil in the pan.

PS the depth of the pan, or the quantity in the pan is not the issue. It's the correct measurement of the full mark that indicates the upper level of the oil, hence the distance between it and the crank shaft. Don't want to have the crank whipping up the oil.
