Sounds to me like you would be fine with a fuel injected 5.0? Throw some heads, intake, and cam on it and you've got 350hp and fuel injection! Not to mention they're a dime a dozen! IRS is optional on most kits, the soft top requires snaps yes. Most hardtops are nice, just bulky and you can't just pop it on if you are at a movie and it starts to rain.

I'm going 408 stroker, edelbrock dual quads, victor jr heads, and a track heat 3 cam.
