Steve, we process some and we send it out of we do not have time. I got a 5 by 6 bull a few years ago and hung it 14 feet in the air...with it's rear hoofs still onthe ground. To clean it out, I crawled inside and removed what I had to. Then it took four men to put it in the back of my truck.

Processing is a matter of knowledge and what NOT TO DO. If you are going to hunt for something, take someone that has done it before to know what to do.
So, relative to your post:
1. find you prey.
2. size your prey.
3. license your hunt.
4. hunt.
5. kill.
6. gut your kill.
7. transport your kill to a processor.
8. pack meat in freezer and eat well.
