The bottom of the oil pan should be roughly 1/2" from the bottom of the frame rails like Sal mentioned. Any lower and you have clearance issues with the slave cylinder and throwout arm.

The CSX1000 series AC cars have tall engine mounts and sit the engine higher than any other Shelby I've seen. It all works, but the surge tank needs to be shortened so it clears the hood.
