without being there its hard to give anything but generalizations. the rich condition on the first setup probably allowed the 34 deg timing without
detonating but when setup the second time the timing at 30 allowed for
the type of fuel you have to not detonate. generally stroked motors do not
like a lot of timing the 30 deg he recommends sounds like it is real. you may
be able to tweak another 1 or 2 degrees but with pump gas may chisel away
at your pistons. it sounds like your tuner knows what he's doing.
