I've been researching this alot, and teh two greatest options I have seen are the LoneStar kit, and the StreetBeast kit*. Also, the Cobray (built on a 'vette chassis) appears to be very comfortable for a man of our stature (6'4" 235 lbs).

*I recently just got a StreetBeast kit, and all I can say is this thing is huge. I have a '00 Camaro, and figured as long as the Cobra was around teh same size, I'd be fine. The Cobra is sooo much bigger its scary. I just got the kit, and I put a seat pan on the floor and jumped in, and I felt like a little kid. So much room. And I've heard alot of bad things about StreetBeast (as you will read on here). I bought the kit from an individual who unfortunately can't complete the build, so I did not have to deal with the company directly. I just took delivery of it, so haven't started working on it but it does look like a very nice, very sturdy platform to build on.
