BTW, Black olives have been used in a number of Chili recipes with good reception.

Having had Texas chili and New England chili, I have to say that a mild Texas chili seems to have more life and IMHO tastes better. Not the flame thrower as so well documented by Fred's re-post, but a mild hardy chili on a cold afternoon after four hours out in the weather is very welcome.
