Yes, some turkey leftover but re-creating is part of the challenge and imo fun.. - today I made Turkey Sour Cream Enchiladas and Turkey Noodle Soup (with homemade stock)... and I still have some left .. but might submit to Hot Turkey Sandwiches with the leftover potatoes and gravy...
tomorrow I'll figure something with the leftover ham...perhaps Navy Bean soup or Pea Soup...?? Who knows..maybe I'll do jambalaya or a ham/turkey gumbo. My oldest, Josh will be doing some mission work in St. Bernard Parrish in LA next summer... got to make sure he remembers the tastes of the south..
