Question One carb or two?

Among many other changes I'm making to my 533BB application I'm pondering the possibility of switching from the Vic Jr. single plane manifold to a dual plane such as the Performer RPM Air Gap to increase low end torque. Right now I'm running a Mighty Demon 850 single carb. I'm wondering why some intakes I've seen here have two carburetors instead of one. I've seen Blue Thunder and some other intakes with two four barrel carb pads. What is the practical difference, advantages or disadvantages? More airflow must be one. I'm most interested in streetability and response under 4000 RPM, won't be racing. Must be some disadvantage or everyone would be running two, no?
