A surpise for you-for once a good one! You want to use the fiberglass piece you are talking about. If it happens to be a thick one, grind the entire thing down from the back side until you can flex it a little with both hands. Once done, install it. You can use large headed rivets 1/8-3/16's. Rivet it just below where it meets the upper one. Now a little body work to cover up the seam. It doesn't have to be real pretty but no large "humps" please. Now for the pretty part, the alumnium you see in many Cobra noses is nothing more than 12" roof flashing that you can cut with a pair of scissors. It takes apiece about 6" long to be installed in the nose. I think I have pictures of the whole thing in my gallery or in the slightly larger than life forum about "the other Ed and DV's Cobra build.
