On the subject of meatballs, roundels, whatever - what diameter are you guys using? The static cling ones I see advertised are 18". I think they're too small. Scaling off of period photos, I'd say they were more like 20-22" back in the day. They were usually pretty big.

If you are having second thoughts about painting them on - why not have a local sign shop whip you up some out of vinyl? You don't have to worry about them coming off, and if you change your mind, just peel them off. If you decide that you like them, they could be permanently painted.

I kind of like the look of a dark colored car with blank white meatballs and no other decals, stripes or numbers. Kind of looks like a newly-minted Comp Cobra, as delivered, before all the decals and numbers are added.
