Had an odd one on the dyno once. Carbs looked nice, and we were able to see fuel trickle from the bowl check screws when you rocked the engine - so we ran it. It went dead lean around mid RPM and literally would not pull any kind of RPM at all. Turned out that the floats were actually screwed down toward the bottom of the bowl - not enough float drop meant no fuel delivery into the bowls when the demand went up.
Check your float level...
