While your question is somewhat open, what else do you plan to use the car for? If you are going to use the car on the street and have a little fun away from the track, I might suggest that you consider a big block (460 or 502) with a Tremec TKO five speed manual transmission. The reliability and low maintenance of these near 600 horsepower engines is amazing to me.
I make this recommendation based on the performance of my 2000 Superformance with a 460 crate motor. The car is very dependable in traffic, parades and when just crusing around. However, bolt on a set of 28 by 10.5 MT slicks, adjust the shocks to the hardest setting and you can run in the 11's all day long. Last summer in 100 degree heat the car ran 5 passes at 11.8 seconds and 120 miles per hour on the way to a runner-up finish at the Fun Ford event in Gulfport, Ms.
Anyway, for what it is worth, you might consider the big block.
