With the 392 stroker kit, you should be running a dished piston or your CR may be too high to run reliably on pump gas. Somewhere in the 16-22CC dish would be appropriate.
Without the specs on the cam it would be hard to tell what to expect on the HP ratings. THe RPM heads aren't the best for breathing, but with a pretty middle of the road cam like a Comp cams 274 or 282 or a TW Stage 2 cam you should be able to hit 400 HP at the flywheel without too much trouble.
