When you title a car, you must follow the laws of the state you are in. Anything else is not Kosher and may cause you problems during future sale, title transfer, or even registration renewal in future years. It is not up to the owner what the title says.
Here in AZ, the rules are that the title says SPCN (special construction) or something like that, but the model and year rpresent the year of automobile you are replicating (i.e. 66 Cobra) or something to that effect.
