Radiator fan question

I have 2 large ones
One in front one in back

Are they not supposed to run all the time ?
If I'm doing spirited driving I get to 100 c
Oil today got to 130c.

But it's ripping hot out today
Normaly I'm at
Water 80-90 c
Oil 80-90c

Seems faster I go hotter it gets
I slow down temps go down

460 with mild cam

It's sort of like when you run on foot down the road, your body heats up, same with an engine.
Maybe go to a Ford Taurus 2-speed Fan, and solve your problems.
