Temperatures should be evaluated after driving for at least 1/2 hour to fully warm up the
oil. Typical water temps for a 180 thermostat are between 180F (highway) and 200F (in traffic on a warm day) could run over 200F depending on your cooling system capacity and anti-freeze mix.
Oil temps should be at least 180F, to cook off water vapors, and can run to 250F or higher depending on whether you have an
oil cooler and/or run the engine harder (more time at high rpms). If you are running an oil cooler on the street, your oil may not get hot enough. If so, you can block off the cooler, or install a thermostatic valve, or remove the cooler. Your temps look on the cool side, but re-evaluate after a long hard run. Hope this helps.
