This might give you a start.
Ford Small-Block Crate Engine Guide - Mustang Monthly Magazine
Are you locked on the 289 displacement? If you go up to 302 or other bored variants you open up your choices
Also add to that the Shelby Engine Company but they are very pricey.

I got my 331 stroker from Keith Craft. Very happy with it.

A 302 or 302 stroker can be built to mimic a 289 in appearance. unless you look at casting numbers and some other small items 98% of people would not know the difference.
You can even install the front timing cover with the oil fill tube like early 289s had.
A mild 302 can give you more power and less stress than a 289. That said there is small difference in sound when you go up in displacement.
Do a little googling and don't forget some of the advertisers here, they can provide a nice 289 or 302 that is well built and they will stand behind it.

Danbury Competition Engines in Danbury, Ct. Joe Lapine is the owner and a complete Ford nerd. Has built a 428CJ for me and a bored out 302 for a slab side. Both are real strong and solid. His prices are competitive. Good luck
