There is a mechanism inside of the emergency brake assemblies that turns a nut to automatically adjust them tighter when they are loose. When I rebuild mine I tool the emergency brake calipers apart to refresh them and turned it out to loosen them. I believe there is a way to do it without disassembling them by removing a pin and using a flat blade screw driver to loosen the screw. They are just adjusted in from your old pads getting thinner and thinner. Your best bet is to go to youtube and search for jaguar parking brake adjustment.
PS, due to the way they operate where they pivot off of one side, they usually dont stay parallel. The contact surfaces on the pads will wear parallel but the pad itself is pivoting. It's not the greatest design but it only has to hold the car, not stop a moving car, so it does okay. Once you adjust them out everything should be fine.
