I also have a remote oil filter. Since the mount for the filter has 4 holes in it, 2 in and 2 out, I set it up as follows. One inlet and one outlet used for the oil lines, one spare plugged and the other used for the oil temp sensor.
I think this will give an accurate reading as long as the oil passes through the filter before going to the cooler. If it goes to the cooler first, the indicated oil temp reading will be lower than the actual oil temperature in the pan.
