You could try the high quality veneers as an option. I'm very happy with the outcome of mine. Used epoxy glue and although my sheet was slightly narrow I mated the machined edges together and the joint is great.
About $30 for a 2.4m x approx 300mm sheet and I'd do it that way again!
Can't recall if I have pics in my gallery of the dash but I think there are some there. Definitely posted a thread with some pics called "ahem testing........" to get an idea of the laminate. This one is a US maple I think, but you can get all sorts of colours, swirls and even finishes as I have just seen recently (a very textured surface).
