Like PatrickT, I left mine on the dolly wheels. They stayed on throughout the entire build (including installing the front suspension) until near completion, when I installed the rear axle/suspension assembly and the engine/clutch/transmission assembly.
Again, the inside of my car was completely empty when I had it painted--only the body permanently mounted to the frame (on the dolly wheels) and the formed, ERA-installed main fuel line and main brake line (both running along the outside of the left frame rail) remained on the car. Not even the footboxes were installed--everything else was easily added later, after the body was painted (with the doors/decklid/hood/grille spltter/defroster vents/side louvers all OFF the car and painted separately). Be sure to note where the large "washers" are located when you remove the brake and clutch pedals and the pedal shaft (I masked those openings in the frame with painters tape). Take the usual precautions with every fastener you use (especially anything going directly into the frame) to reduce the chances of corrosion later on.
It all sounds harder than it really is--just take your time and do everything right the first time for every step before you move on to the next. This will save you MUCH troubleshooting time later on when you drive your new pride and joy away for the first time!
