My 1969 Ford NASCAR Cobra came with one in it and I use them on my replicas which I race. The oil splashing up onto the crankshaft will at times cause a small loss of power plus it tends to whip the hot oil to where it has some bubbles in it at times.
This is just my thoughts on using them and I am not an expert. I am sure that others will come in with better ideas.

Unless you are racing, the windage tray is really not necessary. It is there to prevent the oil from sliding to the side of the oil pan during hard cornering or acceleration. Without the windage tray there could be a loss of oil pressure, as the oil pump may not have enough oil available to properly lubricate the engine.
So unless you are racing, or planning on doing some hard cornering to beat someone else to a preferred parking spot , there is no real reason other than bragging rights. By the way, I have a windage tray in mine.

Because the pans are built as high capacity and low profile by means of a tee shape I highly recommend a windage tray. The good pans are made with traps around the pickups for the same reason. Windage is not only a HP robber it foams the oil which makes it hard to make pressure. Why wouldn't you use one?

Rick Lake on here says no tray in some cases, Blykins says no tray in some cases, Barry says use a tray, I guess it depends on the build...

If you use a tray are you using a screen type or a louvered type, I saw where Barry uses the screen Jay B uses the louvered tray...

I generally use a tray in most customer builds.
I have not seen any power gain on the dyno with the tray. But Ford saw fit to install them in the CJ cars, so they may have some value in a dynamic driving situation. Feels like inexpensive insurance.
I usually use the Canton screen tray - mainly because it clears all the strokers with minimal or no modification. The louvered tray hits sometimes and it harder to modify. The Milodon tray needs quite a bit of work to fit a stroker. The Moroso tray simply won't work at all.

I agree with mickmate as to what he said.
I have the upside-down "T" shaped oil pan, with baffles and my engine builder uses a windage tray to prevent oil splashing and foaming.
Probably a good bet to use one.
